Turkey & Waffles with Smoked Cranberry Compote

Everyone expects cranberry sauce for Thanksgiving. And then no one really eats it. Give that leftover cranberry sauce a reason to shine. Everyone will come running for seconds when you blend leftover cranberry sauce with Duplin Gourmet Muscadine Smokehouse Grilling Sauce and then spoon it over buttery toasted waffles smothered in leftover turkey and gravy. 

Recipe

Ingredients:

  • 1 cup leftover Thanksgiving cranberry sauce, jellied and/or whole berry
  • 1/3 cup Duplin Gourmet Muscadine Smokehouse Grilling Sauce
  • 8 frozen waffles
  • 4 tablespoons melted butter
  • 1 to 1½ pounds leftover Thanksgiving turkey, shredded or cut into chunks and warmed
  • 2 cups leftover Thanksgiving gravy, warmed (see cook's note)

Directions:

  1. Place cranberry sauce and Duplin Gourmet Muscadine Smokehouse Grilling Sauce in a medium bowl. Using a whisk, stir mixture until well blended. Heat mixture in the microwave until warmed.
  2. Lay frozen waffles on a large baking sheet. Brush each waffle with melted butter. Cook waffles under the broiler until browned. Remove pan from oven. Turn waffles over. Brush the other side with butter. Cook waffles again under the boiler until browned. Remove waffles from the oven.
  3. Place two waffles on each of four plates. Divide turkey evenly over waffles. Spoon gravy over waffles. Spoon cranberry compote over waffles.
  4. Makes 4 servings.
