Spinach Orange Goat Cheese Salad

This spinach, orange, goat cheese salad is a perfect salad for a light lunch or an addition to your dinner. Refreshing and tangy, these ingredients just pair perfectly with one another.

Recipe

Ingredients:

  • 3 small navel oranges
  • 6 ounces of goat cheese (in log form)
  • ⅓ cup pecans or pistachios, finely chopped
  • 1 pound fresh spinach or a mix of spinach and arugula, rinsed and trimmed of stems
  • 1 small red onion, sliced into thin rings
  • Duplin Gourmet Muscadine Orange Poppy Seed Dressing
  • Optional: pomegranate seeds and extra chopped nuts for garnish

Directions:

  1. Preheat oven to 350 degrees.
  2. Cut, peel and white pith from oranges with a sharp small knife and cut orange sections free from membranes. Set segments aside.
  3. Cut goat cheese into fourths and form into 4 round disks. Coat with chopped pecans and place on small baking sheet. Bake in middle of oven until heated through, about 5 minutes. Remove from oven and set aside.
  4. In a large bowl, toss the spinach and onions with 3-4 tablespoons of the dressing until vegetables are well coated. Divide among four salad plates. Lay orange slices over each salad. Carefully transfer 1 goat cheese disk to each salad.
  5. Garnish with pomegranate seeds and extra chopped nuts if desired. Serve with additional Muscadine Orange Poppyseed Dressing as desired. Serves 4.
