Apple Whiskey Hasselback Sweet Potatoes

Step aside candied yams. These Hasselback-style sweet potatoes just kicked you off the Thanksgiving dinner throne. Duplin Gourmet Sweet Bourbon Glaze and a dash of apple whiskey, plus a little tang from Duplin Gourmet Muscadine Carolina Mustard Barbecue Sauce, elevate holiday sweet potatoes. Crunchy, honey-roasted pecans are the finishing touch on this side dish that your family will be talking about for weeks!

Recipe

Ingredients:

  • 6 medium sweet potatoes, scrubbed (do not peel)
  • 3/4 cup chicken or vegetable stock
  • 1/4 cup Duplin Gourmet Muscadine Carolina Mustard Barbecue Sauce
  • ½ cup Duplin Gourmet Sweet Bourbon Glaze
  • 3/4 cup honey
  • ¼ cup apple whiskey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup coarsely chopped candied or honey-roasted pecans
  • 3 tablespoons melted butter
  • Fresh rosemary or thyme leaves, for garnish

Directions:

  1. Using a sharp knife, make 1/8- to ¼-inch thick crosswise cuts into the sweet potatoes almost all the way through, but leave the potatoes bottoms intact so that the slices fan slightly but remain connected.
  2. Preheat the oven to 425 degrees.
  3. Arrange the potatoes in a medium-size baking dish. Slightly fan open the potatoes.
  4. Pour the stock, Duplin Gourmet Muscadine Carolina Mustard Barbecue Sauce, Duplin Gourmet Sweet Bourbon Glaze, honey and apple whiskey in a medium-size bowl. Using a whisk, stir ingredients until well combined. Spoon or brush all of the mixture over the sweet potatoes, making sure the liquid gets in between the slices. Evenly sprinkle salt and pepper over potatoes.
  5. Bake sweet potatoes uncovered for 45 minutes or until the potatoes are tender and the liquid in the bottom of the dish is reduced to a syrupy consistency.
  6. Remove potatoes from the oven. Spoon liquid from the bottom over the sweet potatoes. Drizzle sweet potatoes with melted butter. Sprinkle the pecans over the sweet potatoes. Sprinkle fresh rosemary or thyme leaves over the potatoes.
  7. Makes 8-12 servings. Plan on about a half sweet potato per person.
