Christmas Wine Jelly Cookies

Tender, jam-filled cookies are a holiday essential. These get a twist with Duplin Gourmet Christmas Wine Jelly. The soft dough is much easier to handle if it is well chilled before shaping and baking these cookies.

Recipe

Ingredients:

  • 3 cups all-purpose flour
  • One 8-ounce package cream cheese, softened
  • 1 cup butter, softened
  • 12 ounces Christmas Wine Jelly

Directions:

  1. Mix cream cheese and butter well in large bowl until well blended and creamy.
  2. Slowly add in flour, beating well after each addition. Gather dough into a ball, wrap well and refrigerate overnight.
  3. To roll the dough, you have two options. Roll walnut sized pieces into 1-inch balls and then roll each ball 1/4-inch-thick flat disk. Place ½ teaspoon of the Christmas Wine Jelly in the center of each cookie. Fold sides over and place on ungreased cookie sheet. Alternatively, working in batches, roll out the dough to 1/4-inch thick. Use a knife or pastry wheel to cut the dough into 2-by-2-inch squares. Place ½ teaspoon of the Christmas Wine Jelly in the center of each cookie. Fold sides over and place on ungreased cookie sheet. Keep dough and shaped cookies refrigerated while you work.
  4. Preheat over to 350 degrees. Bake cookies 1 inch apart on parchment-lined cookie sheets for 13-15 minutes, until very lightly browned and the jelly starts to bubble. Cool cookies on the pan for 3 minutes and then transfer them to a cooling rack. Sprinkle cooled cookies with powdered sugar just before serving. Makes about 45 cookies.
